Lifelong Learning Lecture: Back to the Future: Food Conservation Posters in the United States 1917-1918

Thursday, September 21, 2023

Speaker: Janet Schwartz, MS, RD, Emeritus Professor and former Chair of the Department of Food and Nutrition, FSU If you think the United States can’t reduce its food waste, think again and go “back to the future.” During World War I, the government asked Americans to change their food habits to “win the war” by reducing food waste and reducing their sugar, wheat, fat, and meat intake. Posters and local libraries were used to change food habits of Americans. Professor Schwartz presents the posters and draws comparisons between the food and nutrition messages in 1917 and 2023.
